Olga and the Sausage Stand
In Copenhagen the sea air was crisp and clean
As I passed a brightly painted sausage stand.
I was overcome and drawn to the seductive smell of sausage.
I moved toward it and took my place in a very long line.
At last, I stood before a woman at the counter who smiled
When she saw me admiring the huge, succulent sausages
Sizzling before my eyes.
She told me her name was Olga, and the sausages were from her farm.
I chose the biggest.
She placed it in a bun she had baked that morning.
From a mason jar with a clear sweet brine, she removed
thinly sliced cucumbers and onions from her garden
and lathered them on top.
As I bit into the sausage, flavor exploded in my mouth,
And I was transported to somewhere else,
A place we go where all senses converge
and we are swept away.
She stood watching me smiling.
I told her it was one of the best things I have ever eaten.
She laughed and said, “You are not the first to say so
And you will certainly not be the last.”
